South Indian Cuisine

Rice is the main base for South Indian Cuisine. It is combined with lentils to make wonderful crispy dosas,lip smacking idlis, vadas and uttapams. These items are glorious and delicious besides being nourishing and digestible due to the fermenting process. They are combined with sambhar,rasam or tamarind dal,dry and curried vegetable and pachadi or yogurt. Their rice preparations are also masterpieces like biryani from Hyderabad,lemon rice and rice seasoned with coconut peanuts, tamarind, chilies,curry leaves, urad dal and fenugreek seeds.

South Indian Cuisine is quite convenient to prepare and is less laborious. South Indian chutneys are made of tamarind, coconut, peanuts, dal, fenugreek seeds, and cilantro. Meals are followed by coffee. South Indian dals and curries are more soupy than North Indian dals and curries. South Indian Cuisine is also hotter than any other Indian regional cuisine. Most of the vegetarian and non-vegetarian dishes of South Indian Cuisine have a generous use of spices and coconuts. The final tempering with oil, mustard seeds, curry leaves, red chillies and urad dhal is almost the same for most of the dishes. In Kerala, the staple food of the people is fish accompanied with steamed rice. Banana chips and jack fruit chips are the specialty snacks of this state and most of the visitors make sure they have at least a few bags of these items in their carry home luggage.


The Andhra cuisine has a great Mughal impact. The kebabs and the Biryanis are not to be missed. Home made pickles, pappads and dry chutney powders to be used with dosa or idli or rice are the famous culinary traditions of this region. The special cooking tips in the four states of the south zone, namely, Andhra Pradesh, Karnataka, Kerala and Tamil Nadu, largely remain the same. Coconut oil is used as the medium of cooking in most parts of this zone. Some of the mouth watering South Indian Cuisine are Hyderbadi Biryani,Bhagara Baingan,Romaali Roti,Kesari Bhath (a kind of dessert),Pineapple Pachhady, Fish Molee,Ven Pongal and many more.
