Saraswat Cuisine

Saraswat Cuisine is very traditional with great tasting range. All the available ingredients make preparation of this cuisine easy and an enjoyable affair. Saraswat Cuisine is prepared with utmost care by the housewives of Saraswat community ensure that it does not merely look lovely but tastes equally delicious. Saraswat Cuisine has its peculiarities and it is the mainstay of Saraswat Brahmins on the west coast of India. Though minor variations may prompt one to regard Saraswat cuisine as different for the various Saraswat sub castes it is fundamentally the same. Variations depend mainly on the raw material locally available, but Saraswat cuisine is recognizable because of its general preference of mild rather than strong tastes.

The Saraswat Cuisine is characterized by the coastal flavor. This Indian Regional Cuisine is typically divided into two sections – vegetarian dishes and sea-food. The wide range of recipes include chutneys, pickles,bhartas, a variety of vegetables, dals and curries as well as fish preparations – from Mackerel, Pomfret to Salmon, Shark and Crabs. It involves a lot of recipes made of fish,unlike the bengali brahmins. A lot of this cuisine revolves around seafood, coconut and cashewnuts which abound in the coastal area. There are lot of curries both dry and with gravy in this cuisine. Coconut is a common, importantly used ingredient along with other spices like chilly powder which impart the rich red color though they are not so pungent, fenugreek seeds, coriander seeds, mustard seeds and others are some of the special cooking tips. The food is cooked in very little oil.


Some of the Saraswat Cuisine like Cabbage dongare, Palak pathrade and Onion spicy dosa use dal as a base. Seafood predominates in the main course with dishes of fish, prawns and crab. The vegetarians have lots of variety - from vegetables such as cauliflower, brinjal, tendli, and other dishes using mixed vegetables like valval cooked in coconut milk and gazbizi ambat to pulse-based dishes like gassi made of chana, potatoes with tender cashewnuts. For the rice lovers there is raw mango rice, vangi baath or brinjal rice), tarkari dal baath and steamed rice. Overall Saraswat Cuisine has a homely feel and flavor.
