Jiaozi

Jiaozi or Chinese dumplings is a traditional Chinese cuisine that is made particularly during the New year time specially in Northern China. Jiaozi is generally made with meat or vegetables that is rolled into thin piece of dough. Chinese dumplings can be both steamed or fried. Jiaozi tastes delicious with soy-vinegar sauce. You can bring variations to your dumplings by preparing various kinds of fillings with chicken, pork, fish, shrimp or beef. You may also use cabbage or your other favorite vegetables for making the fillings.

Here is a short cut but delicious recipe for preparing Jiaozi:

Ingredients for Chinese Dumplings: To make the skin of the dumplings you will require white flour, salt to taste and cold water. Mix white flour, salt and cold water to make a hard dough.

Add soya sauce and salt to the minced meat. Stir slowly while you add salt to taste, 2 teaspoon of black pepper for 1 kilogram of meat, 1 teaspoon of sesame oil, white pepper and 2 teaspoon brandy or sherry to taste.



Take 1 tablespoon of the filling and put in the center of the skin and then role it like a saucer. Seal the edges of the roll. Bring a large pot of water to boil. Put the dumplings over the pot and then cover the pot. When it comes to boil add some cold water. Repeat it for 3 times to cook the meat well. Jiaozi goes best with a sauce made from vinegar, sugar and soya sauce. You may add sesame oil, hot oir and chilli pepper to taste better.
