Fried noodles are of many types prepared with variety of ingredients. Fried noodles forms main course of Chinese cuisine and is one of the top 10 Chinese cuisine across the world. Beef Chow fun is a popular Cantonese dish. The main ingredient is flat rice noodles that is made with green onions, bean sprouts and stir-fried beef. Char kway teow is another delicious fried noodles that is prepared with flat rice noodles along with prawns, sausage, vegetables, fish cake and mussels. Hokkien mee is another popular Chinese cuisine that is cooked with stir fried noodles with other variety of ingredients.

Here is an easy way to prepare Pan-Fried Noodles with Pork/Chicken/Fish:

Ingredients required:
  • 12 ounces pork tenderloin, cut julienne. You can also use chicken or fish instead of pork.
  • 2 teaspoons cornstarch
  • 2 tablespoons light soy sauce
  • 1/2 green onion
  • rice wine or rice vinegar to taste
  • 2 teaspoons minced ginger
  • 1 pound fresh Shanghai noodles, egg noodles, or fettuccine
  • 1 tablespoon sesame oil
  • 1 teaspoon granulated sugar
  • 1 tablespoon light soy sauce
  • 2 cups shredded Napa cabbage
  • 2 tablespoons dark soy sauce
  • Oil for stir-frying
  • 1 cup mung bean sprouts
  • 1 green onion




Marinate the pork with soya sauce and green onion for around 20 minutes. Boil the noodle and drain the water and fry a little in seasame oil. Mix the light and dark soya sauce, granulated sugar and rice vinegar. Heat oil in a frying pan and fry ginger and green onion till brown. Add the marinated pork and cook well. Then add the other ingredients and noodles and fry. Serve hot.
